I'll second Adams as a good undergraduate school. I'm alum and still live and teach in the area. I've also been taking lessons with Jamie the last couple months as time has allowed and he is an excellent teacher.

There is wonderful flyfishing in the area. I've had a couple magic days on rivers in that area. Also, its not far from some mind blowing wilderness areas.
