Most likely you will not find the composer who did this, unless you can somehow contact Coca-Cola's firm for this specific commercial and they wanted to tell you for some crazy reason. I highly doubt that would happen.

The instruments were all MIDI, and most likely the track was chosen among ten or twenty other tracks that they may synced the video to. Most commercial jingles are buyout deals, where the composer for that track is paid a one-time fee for their work. After that Coca-Cola owns the track, and probably couldn't care less who wote it. They can do what they want with it.

If you were studio-savvy you may be able to EQ the dialogue and sound effects out enought to get an "almost instrumental" track, and then transcribe it from ear. But if you did this and performed it, it would technically be illegal.
