What would you charge (by the page? by the hour?) to transpose F. Horn parts for a euph player
replacing the horn in a brass quintet?

Although I use Finale, not Sibelius, the simple transposition of a part and/or score in a pre-existing document should take very little time at all (under an hour, I'd say, unless it was a really long or complex piece, and then it's really just error-checking/spelling that takes a while).
For example, I do copywork for $20/hour, based on my efficiency and experience (master user). In general, hourly is good for professional copyists while per page ($5 - $15) would be good for people who need more time to do the job.
