Mahler, tchaikovsky and Shostakovich symphonies.

Sibelius 2 would be my favorite. Almost anything by Tchaikovsky, Shostakovich, Berlioz, Mahler, Stravinsky, Brukner, and so many others too numerous to try to think of.

Sibelius 2 has some good stuff, and a wonderful bassoon solo to start the second movement.
Something for everyone: Scheherazade.

Symphonic Metamorphosis by Hindemith. There's plenty of love for all sections, not just bassoon, flute, and low brass.
