I recently bought an e flat sousaphone, and I'm hoping to find a plastic mouthpiece for it. I'm completely new to the instrument, I'm not sure where to start in terms of sizes etc. Wondering if anyone has any suggestions on where to start! Thanks!

If the cost isn't a problem, get every Kelly plastic mouthpiece that looks at all like what you might be able to use. Then you can decide what works the best, and tell us. Everyone has a favorite, every mouthpiece has someone whose favorite it is.
I'm assuming 1) you're in the US, and 2) your sousaphone takes a standard shank mouthpiece. I don't recall ever hearing about a sousaphone that didn't, and, if you're in Europe, it might be easier to try J Klier plastic mouthpieces, which I expect are of good quality.

I have a Conn 26K eb sousaphone my mouthpiece choice alternates between a DW 1L and a glow in the dark Kellyberg I enjoyed the Kellyberg so much that I bought a silver plated Kellyberg as well.
(Kellyberg=close approximation of a Helleberg)
(DW1=large Dennis Wick mouthpiece)
