You could go to Northwestern or DePaul (or any number of other schools) and watch a wind ensemble or orchestra rehearsal.
I did this with a high school band once and while the students were definitely impressed by the musicianship and the pieces, they were REALLY blown away by how the director never once had to tell the ensemble to stop talking.

Truly amazing! Isn't it? I would like to witness something like this, myself. Those of us who work with middle & high school students know that talking is a basic right of kids in America. They should be permitted to talk anytime & everytime they wish to do so. I think this is guaranteed in the Constitution. 1. Schilke, already mentioned
2. Ludwig, part of UMI, has a percussion factory in the area
3. Lyon & Healy still makes harps just west of downtown, and they have factory tours
4. Richard Brune makes guitars in Evanston, not really a "factory" per se
There are other small makers of things around, like clarinet barrels and such. Good luck.
