Roast Nutria
Nutria
Onions sliced
Cooking oil
Salt to taste
Freshly-ground black pepper to taste
Cayenne pepper to taste
Freshly-chopped parsley
Boil nutria in water for 15 minutes. Meanwhile fry desired amount of sliced onions in oil in a Dutch oven. Add nutria, cut into serving pieces or whole, and cook slowly, brushing from time to time with oil seasoned with salt, pepper, cayenne, and parsley.

Works for muskrat, too!
