It's funny--the original reason for stuffing birds was to absorb the gamier juices so they didn't stay with the meat. You threw the stuffing away (or fed it to livestock) after the bird was cooked.

It's quite a bit different in my opinion. They aren't as into the sweet sauces and stick more to the spicy stuff. I've been a a few good places in L.A., but they all look dangerous. The food was spicy enough to kill any critters though.

I think this year I'm going to stuff my turkey with Haagan Daas Chocolate and Peanut Butter Ice Cream. After it is fried of course. Kind of like Mexican fried ice cream with a turkey twist.

It depends what stratum of Viet society the cook/owner came from. For years, I had the pleasure of patronizing a restaurant run by a retired Viet Army colonel. Sadly, all of the Vietnamese restaurants here in town are more akin to what Doc says--a lot like Chinese. I prefer Thai to Viet in that case.
