Probably too late, but...

If the weather is nice, take the trip to Jackson. Get some lunch, walk around, run your errands, and enjoy the day.

If the weather is crappy...

go to the casino. Eat at the Buffet, then spend some time in the casino forgetting there is a sun.

If the weather is ok, but you're feeling too lazy to be walking around doing stuff...

Head out to Indianola. Indulge in the lunch you most desire, and preserve it by burning as few calories as possible...drive there and back, no lingering, no excess walking.

No offense, Wade, but I have yet to find much in Jackson of redeeming value except Corky's BBQ -- and my best buddy is from Jackson.

Wade, I haven't been to Jackson in a few years, but I'll keep your post (for the list of suggested eateries) because I may be going later in the summer to help my friend haul some stuff to his kids. Rooster's did sound appealing because I do enjoy a good burger. And, I'll probably eat at Corky's again, too. If I go, I'll let you know when -- maybe we can meet for a beer & talk tuba.

I've been waiting for someone to write:
Get A Big Mac, order of fries, chocolate shake and two apple pies.
Just make sure they got WI-FI.
We pronounce it Guf Coast
