Up north, they sell smoked fish of about any kind. One is called smoked Cisco. It is really tasty. It is smoked carp.

But seriously now folks,
I was making Mahi fish tacos my night to do dinner at the beach.
Anyone do a nice, light, tempura-like fry on those??
Would have been a nice touch, I think...

We always called smoked carp, smoked carp.
I do bacon-wrapped salmon on the grill.

I came up with this simple recipe for smoked fish that anyone can do and works great mixed up with cream cheese and seasoned to taste for a bagel topping. Take a few hard frozen bagged Basa (or other non-descript mild whitefish fillets from the store freezer section). Put them in a non-stick pan with some water to sort of poach them. Add some salt and pepper, and a limited amount of Wright's Liquid Smoke, being careful to not overdo it. Cook covered till done, flake apart and let cool. Then mix with cream cheese and season to taste. Better if you make it a few days ahead. Of course, you could just buy a Whitefish Chub, but they're not in the local stores here.
