I actually wanted to smoke a pork shoulder half (the "picnic roast" half) yesterday...but there was a rehearsal
(low brass section of our orchestra - recital in May) here on Sunday (two of the guys drove from 3-1/2 hours away, and
the other guy drove here straight from the final leg (all the way from the NOLA/Armstrong Airport) of several flights back from Singapore, where he premiered a trombone concerto :shock: ).
I didn't want to get up from the rehearsal every 15 minutes to check the temperature, adjust the vents, or add
wood...(would have been deemed rude, eh?)
That having been said, that shoulder half is NOW refrigerator-thawed, and I'll probably smoke it tomorrow.
ANY TNFJ member who shows up tomorrow or the next day will be offered a FREE (no mouthpiece attached)
barbecue sammich (better than ANY Memphis barbecue joint's barbecue sammich !!!)
