What is the preferred glue for spit valve corks? I just had one pop out.

ideally you shouldn't need one. If it's sized properly it will stay in with friction.
Otherwise, DO NOT USE SUPERGLUE or anything similar. Not Gorilla Glue. Elmer's white glue will certainly do in a pinch.
There is a glue that repair geeks* use specifically , but I don't know what it's called offhand.
*term is used with greatest respect, it's the easiest non-sexist word to type

I would suggest a hot-melt adhesive as used in glue guns. Slice off a little sliver, put it in under the cork, and heat the water key with a match or candle flame while pressing the cork into it with needle-nose pliers. You don't need to get it hot enough to burn anything, and you can always remove the cork with a little heat if you need to replace it later.
