I am looking forward to making a pizza on the grill tonight, but haven't been using a stone. I just put the dough on the grill for a few seconds - maybe a minute, I forget - turn it over, and dress the pizza on the grill. It works OK, the only down side is that cooking time for the toppings is short - some of the stuff can be grilling alongside in the meantime, but if you like the cheese all browned to a crisp this isn't the way.

It's great to be able to get that out of the kitchen, though. We've been having a bit of a heat spell here, forecast for 6PM is 71°F, and you don't want to be heating up the kitchen. Ha ha, OK, I know that's not very hot, but last week it was almost 80°!

[edit] Among other things, the pizza was garnished with pieces of celtuce, which is the large stalk of a sort of lettuce, kind of vaguely artichoke-like in flavor. And smoked mozzarella, onions, niçoise olives. Plenty of a slightly tart tomato sauce, plus a couple dried tomatoes. Kind of random, but the smoked mozzarella saved it. Beer with it was Ballast Point "Calico", from California, a fairly hearty amber ale.

For tonight, I got a pink salmon from a family fishing operation that has a stall at the farmers market. Pinks are a small salmon, 3-4 lbs, pretty economical, just started coming in a couple weeks ago; small size and mild flavor, kind of like a big, very fat trout. Scaled and filleted it and put most away, but cut off a piece for dinner, sprinkled it with salt, pepper, garlic and olive oil. Got some fava beans and oregano out of the garden and fry/steamed them in a saucepan while frying the salmon, and then a plaintain cut up in 1/2 inch slices, in a cast iron pan. The salmon came out of the pan slightly rare and finished cooking on the plate; the plaintain was cooked through and slightly sweet but slightly tart, browned on both sides. The fava beans were a little past their prime, but the oregano helped. Finished off a bottle of pino grigio with it, dining indoors for the first time in weeks as the freakish warm dry spell has given way to typical cool grey weather.

The volunteer fire hall across the street is having a fund raising chicken barbecue today---nothing like having the windows open while practicing and smelling the chicken.....dinner will be yummy today....

Baby Backs last night! Kroger had a sale, $2.29 a pound. They were fabulous! Can't say that about the sides though. Looking for something different I tried an online recipie calling for mixed sweet and white potatoes seasoned with Mace. Don't ever try it. Awful! Ugg!

Mace as in, like nutmeg? Hm, reading up on it, I see "In original European cuisine, nutmeg and mace are used especially in potato dishes, and in processed meat products." (I'm skeptical though, since it would have come from Indonesia and I just doubt that the original Europeans would be getting goodies from so far away, even if we're discounting the Neanderthals.)

Read about it all you want but just pass on eating it. I like nutmeg but not that way. Yuck!

Last night I used the Jack Daniels Marinade in a bag on pork tenderloins. Man was that good eats! If you haven't tried this marinade you need to. Simple, open the bag, put in your meat, close the bag and wait till time to grill. My guests said it was the best grilled pork they had ever eaten. Comes in 4 flavors. My favorite is the mesquite.

Gonna try a different shrimp on the barbie recipe tonight. Marinated with Mrs. Dash lime/garlic and dry white wine before they hit the grill. I'll let you know.

Do not...........I repeat...........Do not marinate your shrimp with Mrs. Dash unless you just don't like the taste of shrimp. I though the savinion blanc would cut it enough, but alas it didn't. The dish was good and we ate it all but you couldn't tell it was shrimp.

If you haven't heard of Penzeys Spices, you need to try to find one. Ever since my family discovered it, our quality of life has improved.

BBQ tip: use Galena street dry rub on ribs or pork, grill, then top it off with Sweet Baby Ray's sweet and spicey bbq during last minute of grilling. The combination of that dry rub and sauce is to die for.

I am very familiar with Penzey's. The only fish I normally use Galena Street on is Salmon. I use their Lemon Pepper on shrimp/fish a lot. I thought I'd try the Mrs. Dash because a friend recommended it. Afterwards I accused him of being a shrimp hater. He laughed and said he wasn't but that was the only way he could get his wife to eat them. Live and learn. :roll:

Tonight I have a surprise in store for myself. 15 of my closest trombone playing friends and I are providing the entertainment for the "Food Truck Friday" event on the banks of the Chattahoochee River. Al, These food trucks certainly do not sound like the food trucks (a.k.a. roach coach) that are no longer seen at construction sites around Cobb County. Those seem to have been eliminated by way of health department regulations and requirements. That is all the experience I have with food trucks. But everything on your list sounds good.

Hereabouts those were only the beginning of the food truck thing. Pretty soon they were attracting some non-Hispanic non-construction-workers, and a couple years later they went main stream.

The food truck phenomena is something to be experienced. The lobster roll was not just good, but spectacular. Not cheap though at $15. Still less than I pay in my favorite seafood restaurant.What a nice evening all around. A 2 1/2 hour jazz, pop, rock, Latin gig with some very good friends. Great weather, 82 degrees, clear and a slight breeze, although it did blow over my stand once. If you have a chance check one of these out. I am discovering that lots of cities now have them. Come and go as you please, entertainment, good food. What's not to like. :D :D :D

I may have to pay more attention to the signs around Acworth/Kennesaw announcing "Food Truck Fridays". And maybe check it out sometime.
