One of my quintet's often plays the Barnes/Canadian Brass arrangement of Hava Nagila (found in the red "Favourites" book) as an encore. We always yell "Oy!" at the end of the piece for a little fun.

I tend to like marches an encore pieces, so I would suggest an arrangement of Stars and Stripes (with the tuba playing the piccolo part, of course) or a circus march, like Barnum and Bailey's Favorite. I saw a free version of the B&B's floating around the internet somewhere. Find something that will "get 'em clappin." Anything that the crowd knows should do just fine. You could also try playing a segment of your show that went well again.

I second the scherzo or the Dance bothare fun and fast and good toe tappers.

I also like a different kind of encore for a more formal concert. You could do an arrangement of Irish Tune from County Derry ala Grainger and impress the crowd with the pure beauty of the piece.
