I use the Audacity sound editor for extracting excerpts (and many other purposes). Best of all, it's free! Find it at: http://audacity.sourceforge.net/

In Acid, just put the cursor where you want to stop. You can either play until it gets there, and pause it with the ENTER key, or just click to the place. Space bar plays/stops the music, but if you use space bar to stop, the cursor will go back to the original spot, which will be the beginning if you haven't clicked it to anywhere else.
Once the cursor is where you want it, the "S" key will split it. Delete the side you don't want by right clicking and selecting delete. You can do this any number of times. Acid automatically adds in a fader. You can't see it at 100%, but if you zoom in, you can, and you can drag it to where you want the fade to start.
