The one I spend all day cooking in my own smoker. Doesn't matter if it is a boston butt, a set of ribs, a briskit, or a complete side of deer, pig or cow. If you have the right wood, right rub, and patience, you too can have outstanding bar-be-que without having to depend on what others think about the best place to get it.

seems to be one agreed-upon fact:

Barbecue is NOT done on a backyard grill over charcoal, gas, or wood in a matter of an hour or less.

The only thing better than Arthur Bryant's is FREE Arthur Bryant's.

Actually, I'd take Bryant's beef, Gates' ham, LC's ribs (or beef, but only one), sauce from either LC or Gate's Classic, fries from LC's, sweet potato fries from the now-renamed Jake Edwards, beer from any of them, and karma from Bryant's.

It is a regional thing. I've had barbecue in Texas, NC, Memphis, Ohio (oHIo???), chains all over, and nothing, to me, stands up to the above mentioned local Kansas City joints.

Good barbecue is not served by a server at table side. You gotta get it at the counter as fresh from the pit as can be. You gotta see the pit, spittin' flames and belching smoke. You gotta see it being sliced.

FYI, KC Masterpiece is NOT Kansas City style barbecue, either in the restaurants of the chain nor the commercially available sauce. Some varieties are a decent marinade, but it AIN'T what we call "barbecue". Not BBQ.

My wifes. She makes a dry rub that makes you weep. We slaughtered out a pig last month and had the ribs prepped and onto the grill within 2 hrs. Not only was that the freshest BBQ I ever had, it just had a flavor that had us all groaning.

...4 + hrs on the Chargriller (with the side smoker box attachment) with a nice rub. It's as good as anything you'll get anywhere.

Has anyone mentioned either adult goat or cabrito, the original goat rope and roast?

I haven't had it since that day decades ago when a Vietnam vet had about 100 people over to his farm. Late that night, after the goat was consumed, and while the host was urinating on the fire, he fell forward and was in grave danger of setting his wooden leg ablaze. Fortunately, a couple of other heroic drunks and myself dove in and rescued him.

I really enjoy Memphis style barbecue pork. I also really enjoy Texas style barbecue beef. My favorite of either is ribs.

Pork or beef, ribs are best dry. I won't claim they don't taste good with a wet barbecue sauce on them, but dry is better.

only take out, one time we went there (5-6 of us) got food set it out on the table and no one spoke (including the quasi-vegitarian asian co-eds) for about 45 minutes....just the sound of tearing cooked flesh, and beer drinking.

I think those of us who grow up in places with BBQ acquire a taste for our regional flavor/style and resist things that are different, at least that's the way I've been.

My favorite BBQ places are Scruggs' BBQ in Knoxville, TN (right down on Magnolia Ave.), Bubba's (I think that's the name) in Eureka Springs, AR,and the Pig & Whistle BBQ we used to get on UT Band trips in Memphis. I liked the pig & whistle for two reasons: 1) it was provided for the band (So Free) and 2)the logo reminded me of our drum major .
But alas, since I've given up meat these recollections are probably a little hazy.

I would have to say the cities I've been in with the best consistent BBQ joints are Memphis, Atlanta and Birmingham. Mmmmmmmmmm, Barbecue.

The old roach coach (la cucurracha express) that that came by work would often have goat as one of the meat choices for your tacos, burrittos, etc......good stuff.
