Adapt some Pouges songs! Boat train works wonders, you just have to have vocals.

Do a Google search on "Irish Pub Sessions" and you should be able to find a ton of charts.

Ian, you made no mention of your audience, or their capacity for tolerating swearing. It IS St. Paddy's day, thus I thought it appropriate. In the past, I have played on pub crawls across the city.

Sounds like you have some good leads now anyway...

I have a set of "Hungry Five in Ireland" books but the instrumentation is a little short of what you asked for:

On a related subject, there is a delightful CD of mostly Irish tunes performed by Gary Buttery, tuba, and Gus Friedlander, mandolin. It's called "Tidal Wave." You can order the CD at http://flathammockpress.com/Tidal%20Wave.htm.

Look for "Irish Black Bottom" by Louis Armstrong - I don't know if there are any charts other than what Lu Watters arranged, but it is a great tune!
There are hundreds of Irish tunes that work very well with small brass/jazz ensembles but I doubt there are many published charts for them. Make it up as you go along!
