I absolutely believe that what comes out is water...a trumpet playing buddy did a demonstration to prove that it's really water that comes out and not spit...
yeah...if it was spit that came out...that'd be disgusting...

Might be a bit of both. When I remove my face from the mouthpiece, there is definitely "spit" in my mouthpiece. But when the horn warms up, there is surely some condensation going on in there. This might be coming from the surrounding air, or from the "warm and slow air I blow into the horn" (that gives me that world class sound).
On another note, we need to clarify something about water:
Drinking water is a solution of a lot "stuff" dissolved in H2O. Depending on your geographical placement, there can be quite a lot of lime in the water. There is quite a lot here in Copenhagen and it makes me scrub the tiles in bathroom a lot to keep the lime deposits to a minimum. Other places, there is a lot of iron in the water. This makes your teeth brown and the dentist happy when you pay twice a year to have it removed. Other places, there is a lot of pesticides, heavy atoms and other chemicals present due to pollution.
Spit, is mainly water. It does though contain a lot of bacteria, human cells, a number of digestive enzymes, cellular residue of all sorts, dissolved salts and other "stuff". If you spit on a table and let it dry, you can see the deposits afterward. Some of this stuff surely ends up in your tuba.
Water vapor is, as stated, potentially clean water. Depending on what else is in the air, when it condenses you can get a lot of stuff to precipitate with it. That is one of the reasons that you get acid rain in polluted areas. All kinds of smaller airborne particles can also be contained in the water when it rains. That is for example why so many people died in Japan from drinking the black water that rained down shorty after the nuclear bombs where detonated....
And we did not even talk about acidity......
