It depends what stratum of Viet society the cook/owner came from. For years, I had the pleasure of patronizing a restaurant run by a retired Viet Army colonel. Sadly, all of the Vietnamese restaurants here in town are more akin to what Doc says--a lot like Chinese. I prefer Thai to Viet in that case.
